From the Abbadia Ardenga vineyards located on the southern-western slope of the Montalcino hill. South-West exposure.
Training system
Spurred cordon.
Average grape yield
60 quintals per hectare.
Harvest
Hand-harvested in early October.
Fermentation
Temperature-controlled stainless steel vats.
Fermentation time
20/22 days.
Aging
36 months in Slavonian oak barrels, 18 months in stainless steel, 18 months in the bottle.
Colour
Ruby red with a tendency towards garnet.
Aroma
Ethereal bouquet with hints of plum jam, nuances of vanilla, and spices.
Taste
Robust, warm, pleasant, and harmonious.
Pairings
All the succulent dishes of fine cuisine, especially stews and aged pecorino cheese.
Suggestions
If possible, open the bottle a few hours before serving at a temperature of around 20°C. Use tasting glasses.
